Unlike the acorn-fed loin, which comes from pigs that exclusively eat acorns during the montanera period, the field grain-fed loin comes from Iberian pigs raised freely in fields and meadows, where they have access to natural pastures and dietary supplements.
This type of loin offers excellent flavor and quality, although it doesn’t reach the intensity and distinctive character of the acorn-fed loin due to a diet less rich in acorns and montanera herbs. Nevertheless, it remains a delicious choice highly valued in Spanish cuisine.
The field grain-fed Iberian loin is made from the leanest and tenderest part of the Iberian pig. It is seasoned with salt and spices, then undergoes a slow and controlled curing process, during which its characteristic flavor develops and it gradually dries.
Once cured, the loin is sliced into thin slices and is ideally consumed raw, as an appetizer or as part of a charcuterie board. Its mild flavor and tender texture make it an exquisite delicacy, perfect for enjoying on any occasion.
