During this time, the pigs primarily feed on acorns and natural grasses, imparting exceptional flavor and quality to the meat.
The pork loin is a lean and tender cut found in the rear of the Iberian pig. It is characterized by its marbling of infiltrated fat, which enhances its juiciness and unique flavor. For preparation, the meat is seasoned with salt, spices, and then stuffed into a natural casing for curing.
