The success of a good ham depends as much on its quality as on a proper knife cut.
Ham Quality: The Starting Point There’s no great ham without great raw material. A 100% Iberian acorn-fed ham stands out for its marbled fat, intense flavor, and deep aroma. These traits are the result of a long and careful process: free-range rearing, natural feeding, and slow, controlled curing. But even if you have the best ham in the world, poor slicing can ruin its flavor and presentation.

Recently, the 'Dehesa de Extremadura' designation of origin has made significant progress in its quest to improve the quality of its products. Following the approval from the Junta de Extremadura for all its products to be 100% Iberian, the European Commission has also given its approval to these new quality conditions. New Quality Conditions Starting from the next montanera, all 'Dehesa de Extremadura' products must meet the following requirements: Black Label: This will remain unchanged, applying to 100% Iberian pigs fed exclusively on acorns. Green Label: This will now also require the pigs to be 100% Iberian, although they will continue to be fed a combination of acorns and feed. Elimination of the Red Label The red label, which until now applied to pigs with a minimum of 75% Iberian purity fed on acorns, will be removed from the 'Dehesa de Extremadura' classification system. This measure aims to simplify and elevate the quality of the products covered by this designation of origin. Market Impact The update to the quality standards not only seeks to maintain the reputation of excellence of 'Dehesa de Extremadura' but also aligns its practices with other prestigious designations of origin such as Los Pedroches in Córdoba and Jabugo in Huelva. This reinforces consumer confidence in the authenticity and quality of Iberian products from Extremadura. Next Steps With the implementation of these new conditions, 'Dehesa de Extremadura' is preparing for the next montanera with the expectation of consolidating its market position and continuing to offer products of the highest quality. This decision represents a renewed commitment to excellence and tradition, ensuring that only purebred Iberian pigs are used in its products.
